Cucumber Salad - Salade de Concombres
1-2 cucumbers (1 large or two small), peeling and seeding optional
4 tablespoons olive oil, extra virgin
1 tablespoon red wine vinegar
1 1/2 tablespoons Dijon mustard
salt and pepper to taste
Slice into thin rounds; combine vinaigrette dressing ingredients together in bowl and whisk together until smooth and creamy; toss gently with cucumbers until well coated; chill until ready to serve.

Easy Potato Salad for Kids and adults 2012

Easy Potato Salad
The adult version follows recipe. Make sure you scoop out children's serving before adding the adult ingredients.
  • 1 lb. russet potatoes, scrubbed
  • 1-6 oz. can tuna, packed in water, drained
  • 1 cup corn, cooked
  • 3 tablespoons mayonnaise
  • 1/3 cup sour cream
  • 1 small tomato
  • salt and pepper to taste
Adult options:
  • 3 tablespoons fresh chives, finely chopped
  • 1-2 tomatoes, seeded and diced
  • ½ chopped cucumber (seeding and peeling optional)
  • chopped green olives
- With skins on, place potatoes in large pot. Cover with cold water; boil for 25 minutes until potatoes are tender when pierced with fork.
- In large mixing bowl, combine tuna, corn, mayonnaise and sour cream. (add adult ingredients here if using any). Stir well to break up tuna chunks.
- When potatoes are ready, run under cold water then peel off skins. Dice and add to tuna mixture. Mix well. Cut tomato in half, squeeze out seeds and juice and dice. Sprinkle on top potato mixture.
Serve as main dish.
Note: small mouths like small pieces so chop items into small, child-size bite sizes. Just another trick to get them to eat the things you want them to eat.

Creamy Curried Coleslaw | Creamy Curried Coleslaw Recipe

  • 1/2 head of white cabbage ( I can't buy bags of shredded cabbage where I live)
  • 1/2 cup boiling water
  • 2/3 cup mayonnaise, any type
  • 1 carrot, grated
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon safflower or vegetable oil
  • 1 1/2 tablespoons mild curry powder
  • sea salt and freshly ground pepper to taste
Finely chop or thinly slice cabbage; place in medium work bowl; bring water to boil and pour over shredded cabbage; toss with spoon til water is warm and finish breaking down cabbage by "kneading" it with hands for several minutes or until desired crunchiness. Drain off excess water. Stir in grated carrot, if using.
In small bowl, whisk together mayonnaise, lemon juice, oil, curry powder, salt and pepper; whisk until creamy. Pour over cabbage/carrot mix. Toss well, coating as evenly as possible. Cover with plastic wrap and chill until ready to serve, letting flavors blend for a minimum of 15 minutes.

Cut tomatoes into small wedges, add to salad bowl. Crumble in cheese, drizzle with olive oil, salt, pepper and Fresh tarragon. Toss gently. Chill until ready to serve. Toss again before serving.

7 Layer Salad for Buffets and Parties
The ingredients can be enhanced depending on how many people you are serving. This recipe usually feeds 8-10 as a side salad on a buffet table. It can also be the main course salad for 4-6 people.
6-8 cups crispy lettuce of choice
1 cup peas
6-8 boiled eggs, chopped
4-6 slices of bacon, cooked and chopped into bits
1 cup grated cheese of choice
1 small onion, finely chopped
Mayonnaise to cover salad

Layer the salad in order given above in a large salad bowl. Begin with the lettuce, add peas, chopped hard boiled eggs, bacon bits, cheese, onion then seal with mayonnaise covering the entire layer of salad with the mayonnaise. Cover with plastic wrap and chill for several hours or overnight or until ready to serve.
When ready to serve, toss well.

Liver disorders affect men in particular and are attributed to alcohol consumption. Alcohol intake is the cause of premature deaths and ill health in the EU. Neonatal deaths in developing countries comprise 41% of all child deaths in the world, among which more than half of neonatal deaths occur in countries like China, Pakistan, Nigeria, Bangladesh and India. Primary reason behind these deaths are pneumonia, tetanus, malaria, measles, HIV/AIDS, diarrhea, birth asphyxia, prematurity and low birth weight, congenital conditions and malnutrition. Reports show that 16% of children are born with a low birth weight each year. One in four of 600 million children in the world, under the age of five having a risk of death, live in a developing country, which is 20 times higher than in the U.S. Furthermore, millions of children suffer from diseases due to weakness, malnutrition and injuries that influence their well-being and options in life, like education and future economic prospects.
Around 6 million child deaths can be prevented every year, if inexpensive health interventions are provided to the mothers and children in need. Healthy and well-educated children contribute to the society, its economic growth and civil strength of a nation. So, it is necessary to provide every child with an environment and health care facility that would secure a better future for them and the society at large.
Governments of developing countries and some nonprofit organizations have taken the first step to make the necessary investments on childcare. However, such programs are vastly underfunded, limiting the services and materials required to provide these children with everything they need. Some highly effective and simple solutions provided by nonprofit organizations are helping to improve the condition of children living in developing countries to a significant level.
